An Amsterdam deli that's caterer, preservery and kombucha brewery all at once - and makes pea soup exactly as it should be.
Thull's is hard to capture in one word: food shop, caterer, delicatessen, wine shop, fermentation and preserving house, all at once.
They make their own pickles and fermented vegetables - sauerkraut, kimchi - and brew water kefir and kombucha. In the shop, a pastrami sandwich with their own sauerkraut sits next to a flatbread with oyster mushroom shawarma.
You can taste that artisanal foundation in their winter classics. The pea soup with smoked sausage from their kitchen has the thickness and depth that only comes from someone really putting hours into it.
For a December parcel, that's gold: a meal you only need to heat up, on the first properly cold evening of the year.
